Sand Dollar Cookies

Hello,

Back in June I went to Hilton Head with my boyfriend’s family. His mom told me that they always bake cookies to take on vacation. So I decided to bake some cookies to take. 🙂 I made these beauties. I thought they were perfect for a beachy vacation. I also made confetti cookies with white white chocolate chips and a monster cookie bar. 🙂 Anyways, these Sand Dollar cookies are pretty much cinnamon sugar cookies with sliced almonds on them. I just bought a bag of honey roasted sliced almonds, which is a lot easier then slicing them yourself. 

Ingredients (Adapted from MAMA MISS)

  •  3 ½ cups all-purpose flour
  •  ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 2 cups powdered sugar
  • 3 eggs
  • 2 teaspoons vanilla extract
  • egg whites or butter
  • cinnamon sugar
  • sliced almonds
  • flour for rolling

Directions

Preheat the oven to 350°F (176°C).

Sift together 3 ½ cups of flour, ½ teaspoon baking powder, and ¼ teaspoon of salt.

Cream the butter and then mix in the powderd sugar.

Add the eggs one at a time.

Add 2 tsp of vanilla extract.

Then, add in the dry flour mixture.

Wrap the dough and refrigerate it.

After refrigerating the dough for at least 2 hours, roll  it out (about 1 cm thick) and and cut it into 2-3 inch circles.

Use a rubber brush to lightly brush the tops of the cookies with egg whites or butter (I used egg whites).

Sprinkle the cinnamon sugar on top.

Press 5 almonds into the tops to make the cookies look like sand dollars. 🙂

Bake them in the oven for 7-10 mins. My oven is really fast so they baked in 6 minutes, but most ovens will be around 10. I took the cookies out at 3 minutes and pressed the almonds in further, then baked them for an additional 3 minutes.

 I baked these cookies a couple days before we left and they were still super soft for the first couple days of vacation! I was amazed how long they stayed soft and chewy for (like 1 wk, which is how long they lasted before they got all gobbled up). I also made some without almonds, for the people who didn’t like almonds and in my opinion, I think they tasted way better with the almonds :)!
