Blueberry Lemon Brownies with a White Chocolate Glaze

Need a recipe for Memorial day? Well these yummy brownies would be the perfect to this late spring, early summer weekend! They are blueberry brownies with a hint of lemon and a sweet white chocolate glaze to top it off!! 🙂

Ingredients

Lemon Blueberry Brownies

  • 1 ½ Cups Flour
  • ½ tsp Baking Powder
  • 12 Tbsp Butter (1 ½ Sticks)
  • ½ Cup Sour Cream
  • 1 ½ Cup Sugar
  • 2 Large Eggs
  • 3 Egg Whites
  • 4 tsp Lemon Juice
  • Zest of 1 Lemon
  • 1 tsp Vanilla
  • 1 ½ Cups of Fresh Blueberries (chilled)

White Chocolate Glaze

  • 4 oz White Chocolate
  • 1 ¾ Tbsp Milk

Directions

Recipe works for a 9 x 13 pan, cut the recipe in half if you want use an 8×8 pan. Butter the pan and preheat the oven to 350ºF (177ºC).

Sift together the flour and baking powder.

Beat together the sugar and butter.

Add in ½ cup of sour cream.

Add in all the eggs and egg whites.

Beat in the lemon juice and lemon zest.

Mix in the vanilla.

Then, add the flour in two portions, mix until all incorparated.

Gently fold in the blueberries.

Pour and spread the batter evenly into your baking pan.

Bake for 35-45 minutes, or until edges are golden and center is cooked.

Once the brownies are out of the oven, start making the glaze. Place the white chocolate and milk together in a microsafe bowl. Heat for 20 secs and stir, then heat in 10 second intervals, stirring in between, untill smooth. Pour and spread over the brownies.

Once cooled, cut and decorate with lemons and blueberries. 🙂
