Easy Vegan Buddha Bowl

Having a busy night and don’t have time to cook? Whether you’re bogged down with work deadlines or swamped with finals. This recipe is perfect and quick-Only takes 20-25 minutes! A quick and homemade peanut sauce with some veggies and rice.

Did I also mention this peanut sauce is delicious?!? I will be using this sauce a lot more now, that’s for sure. YUM


Easy Vegan Buddha Bowl

Ingredients:

  • One bag frozen vegetables
  • 1/2 cup uncooked rice
  • 1/4 cup almond milk
  • 1/4 natural peanut butter
  • 1 Tbsp honey
  • 2 Tbsp soy sauce

Directions:

1. For the sauce: Whisk together milk, peanut butter, honey and soy sauce.

2. Steam rice and in a large sauce pan steam vegetables at medium heat. Once cooked thoroughly, lower heat and stir in rice and peanut sauce (or you can pour the sauce over top).
