One of my friends, who I am training for a marathon with, told me she has been eating more red meat since it is high in iron and helps boost oxygen in the blood! Which is great for runners, since we are using lots of oxygen! I do not love red meat, so it is not something I make often.
My boyfriend’s grad classes started again a couple weeks ago, meaning he is now balancing a full-time job and full-time grad program. I honestly don’t know how he does it, but this is his last year! This time next year he till be ending his clinicals and getting ready to take his PT boards. WOOT WOOT. I have been brain storming recipes that I can put in a foil pan for him and all he has to do is pop it in the oven. It will save him time by not having to prep or clean many dishes. I did come of with a couple things so far, one of which being precooked meatballs in pasta sauce, which he can just throw in the oven to heat up. They also freeze well.
This was actually my first time making meatballs, but I went off a similar recipe I received from my mom for meat stuffed pasta shells. Thankfully, he approved of these meatballs, so I decided to post the recipe. Hope you all enjoy!
Homemade Baked Meatballs
Ingredients
- 1 lb ground beef
- 1 egg
- 2 Tbsp milk (I used almond)
- ½ tsp onion powder
- ½ tsp parsley
- ½ tsp ground black pepper
- ½ tsp garlic salt
- 1/4 tsp ground red pepper
- 2 cloves garlic, minced
- ½ cup Italian bread crumbs
- ½ cup grated Parmesan
Directions
- Preheat oven to 400ºF.
- Whisk together the egg, milk, seasonings, and minced garlic in a medium sized bowl.
- Using a spatula, add ground beef, Parmesan, and Italian bread crumbs and mix together the ingredients.
- Use your hands to knead the mixture until all ingredients are thoroughly mixed.
- Roll into 2 in balls and line along a baking sheet.
- Bake for 12-15 mins.
- There may be a lot of fat on the meatballs, if so, strain them.
- Serve with your favorite homemade or store bought sauce!
